RECIPE: Shrimp Scampi Pasta with Cheddar Biscuits

Probably one of the easiest pasta dishes I've ever made and the taste.... WOW!  So delicious! Do your taste buds a favor and make this quick and easy dish - I'm warming up leftovers for lunch and am already drooling.



What you'll need:
Olive Oil
Salt
Pepper
Cooking Spray
Medium Pot
Baking Sheet
Colander
Mixing Bowl
Medium non-stick pan

Ingredients:
5 oz buttermilk biscuit mix
2 oz. shredded cheddar cheese
2 garlic cloves
1 lemon
4 parsley sprigs
16 shrimp
6 oz. linguine
2 fl. oz. white cooking wine
4 fl. oz. heavy whipping cream
1 oz butter
1/4 tsp. red pepper flakes

Steps:  (Preheat oven to 375 degrees and bring medium pot of lightly salted water to a boil)

1.  Prepare and Bake Biscuits!  Measure out 1/2 cup water.  Place biscuit mix, water, 1/4 tsp. salt and cheddar cheese in a medium mixing bowl.  Mix together until a sticky dough forms.  Use cooking spray on pan and/or aluminum foil.  To avoid the dough from sticking to your fingers, use some of the biscuit mix (or flour) on your hands and divide the dough into four equal balls.  Put on baking sheet and lightly brush with olive oil.  Bake until golden brown, around 15-18 minutes.

2.  Mince garlic. Cut lemon in half.  Mince parsley stems and leaves.  Rinse shrimp, pat dry and season with salt and pepper.

3.  Add pasta to boiling water and cook until al dente - about 9-10 minutes.  Drain in colader, return to pot and toss with 2 tsp. olive oil to prevent sticking.  (Unless you time it perfectly to add to the shrimp and sauce - which I somehow managed.)

4.  Heat 1 tsp olive oil in medium pan over medium-high heat.  Place shrimp in pan and cook 2 minutes on one side, 1 minute on the other, searing it.  Remove from pan (Shrimp will finish cooking in the following step).  Reserve pan.

5.  Using the same pan, heat 2 tsp. olive oil.  Add garlic and cook for about 30 seconds.  Add white wine and cook until nearly evaporated.  Add cream and cook until slightly thickened (3-4 minutes).  Add shrimp, parsley, butter, salt, pepper, and red pepper flakes (I used more red pepper than it called for because I like spicy!).  Cook for about another minute or two.   Add pasta until it's covered with the sauce and shrimp.  Squeeze lemon juice in the mix! (Or set as garnish and use sparingly)

6.  Plate the dish, add biscuits and voila!
