RECIPE: Chicken Sausage and Zucchini Flatbread Pizza

Chicken Sausage and Zucchini Flatbread Pizza

One of the easiest recipes I've ever mad and SO simple!

Ingredients:

Olive Oil - 3 tsp
1 Zucchini
1/4 oz. Oregano
1 tsp Italian Seasoning**
9 oz Sweet Italian Chicken Sausage
2 Flatbreads
7 oz Crushed Tomatoes
1/2 cup Mozzarella Cheese

Steps:

1.  Preheat and Prep.  Wash and dry all produce.  Preheat oven to 450 degrees.  Slice zucchini into 1/2 inch thick rounds.  Pick oregano leaves from stems; discard stems and roughly chop leaves.]

2.  Cook Zucchini.  Add tsp of olive oil in pan over medium heat.  Season zucchini rounds with salt, pepper and 1/2 tsp of Italian seasoning.  Cook until softened.  Remove from heat.

3.  Cook Sausage.  Heat a drizzle of olive oil in a large pan over medium-high heat.  Remove sausage from casings; discard casings.  Add sausage to pan along with half the oregano, breaking up the meat into pieces.  Cook, tossing, until browned and no longer pink, 4-6 minutes.  Remove pan from heat.

4.  Assemble Pizzas.  Place flatbreads on a lightly oiled baking sheet.  Season with salt and pepper.  Spread a thin layer of the crushed tomatoes across the top of the flatbreads (your choice in how much you want to use).  Sprinkle with salt, pepper and remaining Italian seasonings.  Scatter evenly with mozzarella.  Follow with sausage and zucchini.

5.  Bake Pizzas.  Bake pizzas in oven until flatbreads are golden brown at the edges and cheese is melted - 4-6 minutes.

6.  Finish.  Scatter remaining oregano over pizza (to taste), then cut pizzas into slices and serve.

This recipe is from HelloFresh but I did change it VERY slightly to suit my needs.  I also added crushed red pepper to the pizza before I cooked them as I like my food spicy.

** If you want to make your own Italian Seasoning:
1 1/2 teaspoons dried oregano, 1 tsp dried marjoram, 1 tsp dried thyme, 1/2 teaspoon dried basil, 1/2 tsp dried rosemary, 1/2 teaspoon dried sage.
