RECIPE: Lemon Poppy Seed Pancakes
If you watch my stories at all, you would have seen me making these delicious pancakes this morning. A much needed indulgent breakfast after a night of copious amounts of alcohol. And so worth the effort - these are quick, easy and good for the soul.Ingredients needed:
1.2 oz butter
1 Lemon
2 tsp. Sugar
2 cups Pancake Mix
1 1/2 tbsp. Poppy Seeds
6 breakfast sausage links
Maple Syrup
Steps:
1. Preheat the oven to 425 degrees.
2. Zest lemon, half and juice. In a small bowl, combine sugar and lemon zest. Mix thoroughly and set aside. Rub sugar and lemon zest between your fingers to extract most flavor from lemon.
3. In a medium mixing bowl, whisk together pancake mix, lemon sugar, poppy seeds, 1 cup water and lemon juice. Set batter aside.
4. Place sausage links on baking sheet and bake until browned - 10-12 minutes. While sausage cooks, make pancakes!
5. Heat a large non-stick pan over medium heat. Pour 1/2 cup batter onto hot pan. Cook pancakes until bubbles appear on surface, 1-2 minute. Flip pancakes onto second side and cook until lightly browned, 1-2 minutes.
6. Top pancakes with butter and syrup. Serve with sausage!
So so good! Don't forget to spray your pans so the sausage doesn't stick (something I carelessly forgot but still managed to save 3 of them thankfully!)
