RECIPE: Curry Black Bean Ramen

Last night my roommate made a DELICIOUS ramen dish courtesy of Marley Spoon** (and Martha Stewart!).  As inquired by a few of you, the recipe is below.


Ingredients:
1 sweet potato
2 oz shallot
1/2 oz fresh ginger
3 tbsp white miso
1 packet vegetable broth concentrate
1/2 oz scallion
1 tbsp curry powder
3 oz black bean spaghetti
2 oz baby spinach
1 tsp togarashi
coarse salt
1 large egg
natural oil - vegetable, canola or sunflowers
sugar

Steps:
1.  Peel and cut sweet potato into 1/2-inch pieces.  Halve, peel and thinly slice shallot.  Peel and thinly slice ginger.  Stack slices and cut into very fine matchsticks.  In a medium bowl, combine miso, vegetable broth packet and 3 cups water.  Trim ends from scallion and thinly slice on a diagonal.

2.  Bring a medium pot of salted water to a boil.  Gently lower egg into boiling water and cook for 6 minutes.  Using a slotted spoon, transfer to a bowl of cold water to cool slightly.  Crack egg shell and peel.

3.  Heat 2 tablespoons oil in a large pot over medium-high.  Add shallot and ginger and cook, stirring, until softened 2-3 minutes.  Add sweet potato and cook, stirring, about 1 minute more.

4.  Add curry powder and cook, stirring, until fragrant, 1-2 minutes.  Add miso-broth mixture and 1 teaspoon sugar to a boil.  Reduce heat and simmer until sweet potatoes are tender, about 10 minutes.

5.  Meanwhile, bring a medium pot of salted water to a boil.  Add black bean spaghetti to boiling water and cook, stirring, until tender, 6-8 minutes.  Drain, shaking out excess water.

6.  Divide spinach between 2 bowls and top with noodles.  Ladle curry broth and sweet potatoes over top and stir gently to wilt.  Cut egg in half and add to bowls.  Garnish with scallion and sprinkle with togarashi if desired.  Enjoy!


I added some crushed red pepper to mine for some heat and I think more broth mixture would've been appropriate as the ratio of noodle/spinach/potatoes to broth was less on the brothy side and I like it soupy. :)
